DOUBLE CHOCOLATE TIRAMISU

Chocolate fans will cheer this twist on tiramisu: It has ladyfingers infused with cocoa instead of espresso and an ethereal filling of chocolate and cream cheese. For an easier way to make traditional tiramisu, substitute cocoa for espresso and use cream cheese instead of the more expensive mascarpone. Double Chocolate Tiramisu

You’ll need: 2-quart serving dish

2 Tablespoons unsweetened cocoa powder, plus more for garnish
1-1/2 cups heavy cream
4 ounces semisweet chocolate, chopped
1 bar (8 ounces) cream cheese, room temperature
3/4 cup granulated sugar

PUMPKIN BREAD PUDDING WITH DULCE DE LECHE

This dessert takes the flavor of pumpkin pie and transforms it into a comforting bread pudding drizzled with dulce de leche. The best part of this dessert is that you can bake it up to 2 days ahead of time, refrigerate, and reheat before serving. To store, cover and refrigerate, up to 2 days. Pumpkin Bread Pudding with Dulce de Leche
Yield: 8 servings

Unsalted butter, room temperature, for dish
1 can (15 ounces) pumpkin puree
1 cup whole milk
1/2 cup heavy cream
2 large eggs, lightly beaten
1/4 cup light-brown sugar
1/2 teaspoon coarse salt
3/4 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon anise seed, roughly chopped
10 ounces day-old bread, such as brioche or sourdough, cut into 1/2-inch slices or 1-inch cubes
1/2 cup pecans, roughly chopped
1 cup homemade Dulce de Leche, or store-bought, warmed

POACHED PEARS WITH WHIPPED MASCARPONE RECIPE

It’s pear season! I love pears…Watch and learn how to make this buttery Poached Pears with Whipped Mascarpone. A pear purchased at the farmer’s market or grocery store will almost always be unripe. Because pears bruise easily, they are picked and shipped in an unripened state. It is very important to properly ripen the pears at home to improve its flavor. Choose firm, fragrant fruit without soft spots. Place the pears in a paper bag. Pierce the bag in several places, fold the top over, and set aside for two to seven days. To check for ripeness, press down gently on the stem end. When ready, it will give slightly. Don’t wait for the pear to feel soft all over, or it will be mushy. Once the pear is ripe, refrigerate, unwashed, wrapped in a paper or plastic bag until ready to use, up to one week. Although pears should be fully ripe for eating out of hand. However, for salads or cooking, they are best when firm-ripe. Watch and learn how to make this quick and easy recipe for buttery poached pears topped with whipped mascarpone.

Poached Pear with Whipped Mascarpone
Makes 4 servings

1 cup apple cider
2 Tablespoons dry vermouth or dry white wine
2 Tablespoons unsalted butter
2 star anise
1/4 teaspoon salt
3 Anjou or Bartlett pears, peeled, cored and sliced into six slices each
4 ounces mascarpone
1 cup heavy cream
2 Tablespoons honey
Crisp almond cookies, for serving (optional)

PEACH SHORTCAKE RECIPE

Peaches are high in vitamin A, vitamin C, vitamin E, a good source of thiamin, riboflavin, vitamin B-6, folate, fiber, potassium and antioxidants. Need any more reason to eat peaches? Watch and learn how to make this super easy Peach Shortcake, ripe sliced peach soaked in Triple Sec paired with warm biscuits and vanilla ice cream, heavenly summer dessert! This is also good with nectarines instead of peaches. For softer, cakier biscuits, add more milk and spoon the mixture onto the baking sheet. Firmer biscuits require less milk and should be rolled out and cut.

Peach Shortcake
Makes 10 to 12 individual shortcakes

For the biscuit
1-3/4 cups all-purpose flour
2-1/2 teaspoons baking powder
1 teaspoon coarse salt
6 Tablespoons (3/4 stick) chilled unsalted butter, cut into small pieces
3/4 cup milk
1 Tablespoon granulated sugar
1 teaspoon cinnamon

For the filling
1 pound fresh ripe peaches, peeled and sliced
2 Tablespoons fresh orange juice
2 Tablespoons Triple Sec liqueur, optional
1 Tablespoon unsalted butter, softened
1 pint best-quality vanilla ice cream, slightly softened, or whipped cream
