avocado creme bruleeMost Americans think of only guacamole, salads and maybe the adventurous hamburger when it comes to avocado. I really love to use avocados in desserts, the way we do in Brazil. The buttery texture of avocado lends a perfect creaminess to this reinvented crème brûlée, which unlike the classic recipe, is not baked at all. This mixture of avocado and condensed milk is simply puréed in a food processor.

After you have simulated the consistency of a custard, you add a crunchy layer of burnt sugar on top immediately before serving. The result is a truly inspired dessert that takes less than five minutes to make plus a little chilling time. Because of its richness, this dessert can also act as a mini crème brûlée: Simply serve it in smaller ramekins. This will yield more servings, of course, depending on how small a ramekin you use.

These delicate crispy light almond lace cookies are named after the lacy-like holes that form as they are bake. These cookies can be left flat or rolled into cones or cylinders. Remove the cookies from the oven and quickly, lay each cookie over a cone-shaped object, such as a water-cooler or shaved ice cone cup, pressing edges together; or roll cookies around the handle of a wooden spoon, pressing the edges together to form a cylinder. They can also be dipped in chocolate. Anise seeds add a hint of licorice and the orange zest adds a citrus aroma to these pretty lacy cookies. Store cookies, between sheets of parchment, in airtight containers, up to 2 days. Each thin almond lace cookie has only forty-four calories. Go ahead have two cookies!

Almond Lace Cookies
Makes 24 almond lace cookies

1/2 cup blanched slivered almonds
3/4 teaspoon anise or fennel seed

Pineapple Fritters
Makes 4 servings

2 cans pineapple rings, in juice
A generous glug of coconut rum
2 Tablespoons brown sugar
150 g self-raising flour
300 ml sparkling water
A small handful of desiccated coconut
Vegetable oil (for deep frying)
200 ml double cream
A few tablespoon icing sugar
Squeeze of honey

For the pudding
1/4 cup raisins
2 Tablespoons dark rum
12 slices white bread, preferably slightly stale (about 1/2 pound)
1 cup milk
1 cup coconut milk
2 eggs
3/4 cup granulated sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

For the rum sauce
3/4 cup dark brown sugar
1/3 cup water
1/2 cup butter (1 stick)
1/4 cup dark rum
