One of Ciao Bella’s most popular recent flavor creations, this started as a seasonal offering for our chef customers and became wildly successful in our gelaterie. The popularity of Key Lime with Graham Cracker Gelato was a bit of a surprise because its flavor is decidedly tart, while Americans tend to have sweeter palates. There’s always a fine line between creating what chefs appreciate and what customers will like, but in this case everyone was happy. This flavor is so popular that in less than a year it became our number-one retail gelato flavor in New York City.

CIAO BELLA BLACKBERRY CABERNET SORBETTO

blackberry-cabernet-sorbetto-recipeTart and sweet blackberries play off dark, tannic, full-bodied cabernet in a sophisticated flavor combination. This elegant sorbetto has attracted a lot of press attention, became the number-one-selling sorbetto in our San Francisco store, and won a sofi award. To make Blackberry Sorbetto without the wine, simply omit the cabernet. Pour the wine into a medium saucepan and place over medium heat. Simmer until reduced to 1 cup, about 10 minutes. Remove from the heat, and let cool com­pletely. Transfer to a bowl, cover, and refrigerate until cold, about 1 hour.

CHINESE TAKEOUT CUPCAKES RECIPE

House Special: Pork Lo Mein and Vegetarian Fried Rice. The kids will love this broccoli: green fruit chews with green frosting and nonpareils on a pile of lo mein noodles made of frosting squeezed from a ziplock bag.

Serve fried rice on the side: puffed rice cereal tossed with fruit chews and jelly beans. And don’t forget the caramel fortune cookies.

Pucker up! Lemon cupcakes filled with lemon curd, topped with meringue. Use pausterized egg whites or top with fresh whipped cream instead. The lemon filling can be made up to two days ahead.
