Happy Friday, let’s make Banoffee bites! You are going to go bananas for this handheld version of the classic English dessert. Banoffee pie is made with a cookie-crusted pie shell slathered with toffee sauce or dulce de leche, topped with sliced bananas and finished with coffee flavored whipped cream. Ben and Jamie, from Sorted, make Banoffee Bites by stuffing banana and toffee into fillo dough, and turning them into a cool little handheld dessert to top of the end of any meal.

Banoffee Bites
Makes 4 servings

4 sheets Fillo Dough
2 bananas
A pinch ground cinnamon
A shot rum
A can or 15.8 ounce condensed milk
A handful almond flakes
A few knobs of butter (50 g)
150 ml double cream

SWEET TIPS: The toffee filling is super easy to make — just make sure to check the water level occasionally to ensure the cans remain submerged — because if you let the can boil dry, it will explode and cause serious damage. When it is done, remove the cans to stop the cooking, and allow to cool overnight.

I like to have extra toffee sauce on hand, and since they keep indefinitely when unopened, I boil several cans at the same time.
