Having purchased a copy of The Cake Bible about 20 years ago, I was elated when I saw Rose’s Heavenly Cakes book at my local Costco a couple of days ago. I’ve made the recipe for the coconut cake and it is spectacular! I didn’t have time to dedicate to a complicated icing, so I made my own version of a white chocolate sour cream ganache. It was okay, but next time I’ll try one of recipes in the book. Thanks Rose! Your advise has been so helpful and I love that I have options to weigh my ingredients. In Canada, butter comes in a big 1 lb. block and measuring tablespoons is tedius.
